A clear soup is the one that doesn’t contain any added starch. Starch like that of potato starch or corn starch. Instead it is just a good combination of vegetables, a generous sprinkle of pepper powder and a dash of lemon. |Lemon juice||1 tbsp|

Our first step is blanching the broccoli florets. For this, first of all we have to clean the broccoli and cut it into smaller pieces and wash them well. On a sauce pan, pour 1 cup of water and bring it to boil and then add broccoli florets and ½ tsp salt. Let it boil for 2 minutes and turn off the burner. Strain off the water and keep the blanched broccoli aside.
Now its time to prepare the other veggies before we cook the soup. Chop onion to fine slices. Dice the red and yellow bell peppers and carrot to small cubes. Chop scallions. Keep them all ready at your side.
Now let us start with the cooking session. Heat a pan and add butter. Before it melts out, add sliced onion and sauté it until the raw smell goes.
Now add the diced carrots and sauté for a minute. Add red and yellow bell peppers. Sauté them all for another 1 minute.
Add salt and pepper and mix well. Now add 2 cups of water and let it boil. Now lower the flame.
Add the blanched broccoli to it and let it boil again. Turn off the flame.
Now serve the soup to soup bowls and then add few drops of lemon juice to each of them. Let us enjoy our protein pack of a soup for an appetizer while waiting for a meal.
