Vendakka (okra) thoran is a simple no onion no garlic recipe made of okra, curd and scraped coconut.
My mom often prepares this as side dish for sambar rice. It’s a simple recipe and takes 25minutes to prepare.

Stage 1
Wash okra in water, trim its edges and slice this in to small thin rounds.
Stage 2
Heat a frying pan, pour and heat oil. To it add mustards and wait for it to pop. You may also add urad dal at this stage and wait for the urad dal to become golden. To this add chopped green chillies . As it fries, add curry leaves.
Stage 3
To this add chopped ladies finger, salt and ¼ tea sp turmeric. Mix it well and close the lid and cook for 5 minutes, stirring in between.
Stage 4
Roast the cooked ladies finger until it forms a golden brown colour.
Stage 5
To this add curd. Stir till it becomes dry in low flame.
Stage 6
To this add scraped coconut and mix well. Stir until the raw smell goes away.
Now the dish is ready to serve.
